Marshmallow is a gangly plant, growing white flowers touched with pink that resemble miniature Hollyhocks. The roots of marshmallow can be harvested in the second year in autumn. Replant the crowns of the plant after harvesting 1/2 of the roots. The flowers and the leaves are also edible. Self-sows.

I enjoy adding marshmallow root to herbal teas. See recipe below. Marshmallow root mixed with herbal tea will add a pleasant viscosity to the liquid.

Sowing Marshmallow Seeds
Sow 1/4 inch deep indoors 6-8 weeks before the last frost date. Cold stratify for 4 weeks. Transplant after the last frost date. Or, direct sow in late winter. Full sun.
Recipe: Hibiscus and Rosehip Tea
Combined in a teapot:
1 teaspoon dried hibiscus flowers
1 teaspoon seedless rosehips
1 teaspoon fresh ginger, minced
3 cups boiling water
Steep until cool enough to drink. Stir in:
1 teaspoon raw honey
1 teaspoon fresh squeezed lemon juice
