Eggplant 'Rosita' has beautiful deep pink, medium-sized fruits. The white flesh is mild and non-bitter. It is not as productive as some varieties, but it is very pretty. Rosita eggplant was developed in the 1940s by the Puerto Rico Agricultural Experiment Station.

Sowing Eggplant Seeds: 
 
Sow eggplant seeds a 1/4 inch deep 8 weeks before the last frost date. Transplant outside 16 inches apart 2 weeks after the last frost date or when all danger of frost has past. Full sun.
