Beet 'Chioggia' is an unassuming red color on the outside, but has red and white candy stripes on the inside. You can bake these beets whole if you desire to retain the stripes after cooking. My favorite way to eat these colorful beets is raw, very thinly sliced with vinegar dressing. 
 
This Italian heirloom is usually grown to 2 inches in diameter. It is also known as Bassano beet.
 
Sowing Beet Seeds: 
 
Sow seeds outside 4 weeks before the last frost date, 1/2 inch deep. Thin to 3 inches apart. Full sun.
