Eggplant 'Casper' is the friendliest of eggplants on the tastebuds compared to its purple cousins. This French heirloom is generally elongated, but a few of the fruits are more round as pictured above. The luminous white skin of the 6-inch fruits practically glows in the garden. Casper's flavor is mild, making it suitable for all recipes that call for eggplant.
Eggplant fruits are best picked when they still have shiny skin. However, if you would like to save seeds, wait for Casper fruits to turn yellow with a dull skin and harvest right before frost. It is best to wear gloves when separating seeds from the pulp as the pulp can cause a burning sensation on skin.

Sowing Eggplant Seeds:
Sow eggplant seeds a 1/4 inch deep 8 weeks before the last frost date. Transplant outside 16 inches apart 2 weeks after the last frost date or when all danger of frost has past. Full sun.
