Squash 'Zucchino Rampicante' is the only truly dual-purpose squash I know. You can enjoy the immature fruit in summer and store the mature fruits for winter. This Italian heirloom has a mild flavor with a rice-like texture in both immature and mature squash. The color of the immature squash is spring green with white stripes, and the color of the mature squahs is tan with a light orange interior. The plants are very productive. The mature fruits can be easily stored for 5 months under good conditions.
I can't get over how long the necks of Zucchino Rampicante are. The mature fruits can be a couple of feet long, especially if it fruits are grown on a trellis or fence. The mature squash with its smooth skin is easier than most squash to peel. I found my favorite way to peel the neck of the squash is to cut it into 2-inch segments and steam it until tender. Then you can simply remove the skin before adding it to a recipe like curry or stir-fry. I usually just bake the seed cavity.
Sowing Squash Seeds:
Sow seeds in hills 1 inch deep after the last frost date. Space hills 4–6 feet apart. Thinned to 2 plants per hill. Full sun.
