Squash 'Vegetable Spaghetti' has lemon-yellow, 8-inch fruits with a stringy texture that pulls apart in strands after cooking. The flesh is often used as a vegetable spaghetti after being baked or boiled.


This Chinese heirloom was introduced to Japan and then to the United States in 1936. Harvest these squash when the rind is hardened and before frost.


Sowing Squash Seeds:


Sow seeds in hills 1 inch deep after the last frost date.  Space hills 4–6 feet apart. Thinned to 2 plants per hill. Full sun.
