Beet 'Crosby's Egyptian' has dark burgundy heart-shaped roots with flattened tops. The texture is smooth and the flavor is sweet even in summer! This is one of my favorite beets for a summer harvest.
Cosby's Egyptian beet is a 19th century heirloom that is not actually from Egypt. It was named because of the great interest in all things Egyptian at the time. This strain of the 1860s Egyptian beet was improved by market grower Josiah Crosby of Massachusetts for smoothness, earliness, and depth of flavor. It was released to the public in 1885. Also known as Crosby's Early Egyptian.
Sowing Beet Seeds:
Sow seeds outside 4 weeks before the last frost date, 1/2 inch deep. Thin to 3 inches apart. Full sun.
