Parsnip 'Hollow Crown' has 12-inch, pale cream-colored roots that are sweeter after a frost. They are very tasty steamed and sauteed with butter. This 1879 American heirloom is suitable for cold storage. Parsnip leaves are not edible.
Sowing Parsnip Seeds:
Soak seeds overnight and sow 3 weeks before the last frost date outside. Sow 1/2 inch deep, 4 inches apart in rows 16 inches apart. Keep the soil moist as germination is slow. Full sun.
