Amaranth 'Golden Giant' has great plumes of copper flower heads that are full of delicous seeds in the fall. This towering heirloom's seeds are slightly larger than other amaranth seeds, making it the ideal amaranth for eating. It is also the most productive amaranth. I like to cook the seeds as a porridge with butter and honey.
Amaranth will self-sow in the garden, but the seedlings are easy to pull if you have too many. Wait for the amaranth flower heads to start to dry up before harvesting seeds. Wearing gloves when havesting seeds will prevent slivers. Also known as Amaranthus hypochondriacus.
